Apple Cinnamon Eggs

This morning I woke up starving. Like stomach growling at 6am starving. And its not like you can go hop out of bed and cook a meal at 6am. Well, at least I dont. So I just stayed in bed and grabbed my phone and started looking through emails, then facebook, then instagram and found this not so good looking picture of a meal, but the title sounded good. Apple Cinnamon Omelet. I saw that I could eat all the ingredients in my lovely sugar detox so I took note and made it after I got home from CF this morning. YUM! Ingredients:

  • 1 green apple sliced thin
  • 2 eggs
  • 1 tbsp coconut milk (I am out so I used coconut water)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg (none of that either… shopping list)

In a lightly greased pan (I used coconut oil) lay out the apple slices and cook on medium heat. Turn them over once they get a little brown, about 2 minutes.

Meanwhile beat the eggs with the coconut milk and the spices. Pour the egg mixture over the apples. As the eggs start to set, run the spatula around so the eggs all hit the pan and cook evenly. When the eggs are cooked, flip it over and cook for about another minute.

They may not look pretty but they are so good! And if you are not having any sugar, the combo between the apple and the cinnamon makes this feel like a cheat breakfast. Mmmm!
