These were so good that I am going to make them tomorrow too when I have company over! I havent had much seafood lately so I am going to try a few shrimp and fish dishes this week. Well we are off to a good start!
Imgredients:
- 1 lb of large shrimp
- 1 cup unsweetened coconut
- 1 cup of almond flour or almond meal
- 1 tsp of garlic powder
- 1 tsp salt
- 1 tsp pepper
- 2 eggs
- 1/2 to 3/4 cup coconut oil for frying shrimp
Take your shrimp and cut them lengthwise so they will butterfly when you cook them. Make sure to de-poop them!
Take your eggs and whisk them. Add the garlic powder, salt, and pepper and whisk together. Take the cup of almond meal and coconut and mix together in a separate bowl. Take your shrimp and coat them with the egg spice mixture then coat with the coconut/almond mixture .
Get a saucepan big enough to hold all shrimp at once. Add the coconut oil and heat until very hot. Add the shrimp and cook on each side about 2 minutes each, or until the crust is a light golden brown.
Serve with some type of spicy sweet dipping sauce. I had this pepper jelly I bought from this lady at the farmers market because she was so nice. Never thought I would use it! I just heated it up. I am going to look for a good paleo sauce though to use next time. Also a good mango salad, seems like that would be a good counter part to this dish.
