Paleo Blueberry Coconut Bread

So this could easily be a dessert if I made it exactly like the recipe I saw said to… which was add chocolate chips! But instead of the dried blueberries and the chocolate, I just used fresh blueberries. Super delicious and could be a dessert I suppose, but we ate it as breakfast when I took to my boyfriends parents house for fathers day. Of course they smothered it in butter! It was definitely a hit!

Ingredients:

  • 6 eggs
  • 3/4 cup coconut flour
  • 1/2 cup coconut oil
  • 1 cup blueberries
  • 2 tbls raw honey
  • 1/2 tsp sea salt
  • 1 tsp baking soda

Mix the eggs, oil, honey, and salt together. Combine the flour and baking soda with the egg mixture until there are no lumps. Add the blueberries at the end so they stay nice and full.

Put in a 4×9 baking dish, or bread pan I guess they are called. Bake at 350 for about 35 minutes. OMG good!
