Creaaaamy protein shake

How to make your protein shake super creamy? Throw in half an avocado!

This one was great and a treat after working out.

*1/2 avocado
*1/2 banana
*1 scoop protein powder (Zipvit type)
*fill to rim with ice
*fill to rim with coconut water (after ice) ends up being about 1/2 cup
— I get my protein products here.

Blend away in your magic bullet. Filling enough for a meal replacement and great for after a workout treat!

Egg and Avo Mash

Okay, this may seem too easy to put on here but its one of my favorite breakfast’s when I don’t have a lot of time.

Ready…

  • 2 hard boiled eggs
  • 1/2 avocado

Mash them up together add salt and pepper and you have your protein and healthy fat to start your day! If you dont even have time to hard boil eggs, Costco has this great pack of 24 pre hard boiled (Cage Free) eggs you can get for like $5.00. What a deal. But this is by far my favorite pre- workout meal or post workout meal because its so easy and you get all the essentials in!

Oh, and can I add my favorite seasoning of all time is called “Slap ya Mama” cajun seasoning. This is the best for eggs or to spice up vegitables, especially when roasting brussel sprouts. www.slapyamama.com Has awesome hot sauces too.

Chocolate pudding- paleo style

Time to raid the fridge and pantry of whatever is left over and attempt to make something yummy out of it. This is a play on a recipe from the 21 day sugar detox (it was gross) and PaleOMG recipe. Enough sugar to make it feel like a treat, but not enough for Joe to actually enjoy it as much as I will! Ingredients might be a little off, I literally just threw it all in together and hoped for the best.

Ingredients:

  • 2 overly ripe avocados
  • 1 overly ripe almost brown banana
  • 1-2 tsp raw honey. Just depends on how sweet you want this
  • 2-3 tsp unsweetened cocoa powder
  • handful or whatever is leftover of the Enjoy Life Chocolate chips
  • splash of vanilla extract
  • splash of leftover canned coconut milk

Put the avocado’s, banana, honey, cocoa powder, vanilla, and coconut milk in a food processor. Mix until creamy smooth. Taste it when done and if its not sweet enough then add that second tsp of honey. Once mixed together then throw in a small amount of the chocolate chips and blend again. Whammo- chocolate pudding! If I had kids I think this would be a great dessert to serve them chilled as a treat. But since I dont, Joe will have to do!

Cucumber/Avocado salad with lots of other goodies!

So day 4 now of this sugar detox. I dont seem to have a ton of cravings, but all I want to do is eat! Well there isnt a whole lot to eat unless you make up snacks to chow down on when in need. I saw that you could eat a few root chips on this plan, well never- I repeat- never put the bag in front of you. Take a handful or so, or the whole bag disappears quickly. I stopped myself before finishing out of guilt that my boyfriend would come home and see this bag empty.

This salad is just full of a bunch of stuff from my fridge. Threw it all together and made up a dressing to toss on top and it was so good. Pair that with some stuffed mushrooms and I had the perfect lunch with enough left over to snack on.

In Salad:

  • Persian cucumbers chopped up (any cucumber would do, these were just cute and cheap at TJ’s)
  • Cherry tomatoes sliced in half
  • Jicama in little pieces
  • 1 avocado diced
  • some cilantro
  • some red onion chopped up

Dressing

  • Some olive oil
  • A tad of balsamic (had to be careful here because sometimes this is packed with sugar)
  • squeeze of a lime
  • salt and pepper

Chop up all ingredients, toss in a bowl, add dressing. BAM! Enjoy.

Paleo Chicken Fajitas in the crockpot!

Crockpot time! I got an A from the boyfriend on the paleo food scale, and he said if he was able to have a tortilla, cheese, and sour cream, they would have been the best fajitas he’s ever had. Sorry I mentioned those items but if your cooking for a family, then you can just add those to the dinner table and everyone is happy, including paleo eating YOU! And that’s who really counts anyway…

These I made during my lunch hour. Threw the chicken, spices, and salsa in the crockpot, shredded a little later, then just quickly sauteed the peppers. Boom, done!

Ingredients:

  • 2-3 chicken breasts (for more chicken just add a little more of each spice)
  • 1/2 cup salsa verde
  • 1/2 cup regular salsa
  • 2 tsp of each: onion powder, garlic powder, cumin, paprika, chili powder
  • Red, green, yellow bell peppers
  • 1 purple onion
  • 1 tomato
  • 1 avocado
  • Optional: lime and cilantro
  • Romain lettuce leaves

Toss the salsa’s into the crockpot, then put the chicken on top. Add the spices and cook on medium. A few hours into cooking this, take 2 forks and shred the chicken. Put lid on and keep cooking. I started it around noon and took it out around 5.

Take your peppers, onion, and tomato and slice them and sautée in a little olive oil. I added a bit of the spices to livin up the peppers. When they are all soft and carmelized together they are ready!

Take the lettuce leaves and use them like taco shells. Add the chicken mixture, peppers, and top with avocado. A squeeze of lime and cilantro would have been great too. Make sure you have napkins because this gets a tad messy!

Mango Avocado jalapeño salad

Made this tonight along with the coconut shrimp again. I knew that was going to be a 2 day in a row dish! Was a great side dish and can’t wait for seconds after I’m done writing this!

Ingredients:

  • 4 small mangos or 3 large mangos
  • 3 avocados (not too soft)
  • 1 small red onion
  • 1 jalapeño
  • Sea salt and pepper to taste
  • Cilantro
  • Baby spinach

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh squeeze lime

Cut the mangos into strips and the avocados into cubes. Take a bunch of cilantro and chop, just not too fine, add to mango and avocados. Take the jalapeño and scrape the seeds out. Cut into tiny little pieces and add to salad. Cut your onion into small pieces as well, add to salad. Sprinkle with a little salt and pepper but not much because the dressing gives a great flavor and kick.

Combine the olive oil, balsamic, and lime and mix together until creamy smooth.

Put a handful or two of spinach leaves on your plate, add the mango salad, then top with balsamic dressing. Serve alone or with any dish you like. So fresh and good!
