Coco Monkey Smoothie

16 Aug

Thank god I discovered this. I got this from the 21 day Sugar Detox book of recipes that are okay, and this is the best. I only wish I could have one at every meal. I didnt put any coconut cream concentrate in mine and it was still delicious but I can’t wait to try it when I get that creamy delishesness in my house. I made this after searching around my cabinets and found my handy dandy magic bullet blender. I forgot I had this and now I cant wait to start using it more.

Ingredients:

  • 1 cup coconut water (no other added ingredients)
  • 1 frozen banana (with green tips so not quite ripe)
  • 1 tbls almond butter
  • 2 tbls coconut cream concentrate (optional)
  • 4-6 ice cubes
  • 1/2 tsp pure vanilla extract
  • pinch of sea salt

Mix all ingredients in the blender or hand blender and enjoy. So good I want another! As you can see I didnt have the patience to put in a regular cup or even wait to drink before taking a picture!

I am a HUGE sugar addict. I finally made this on day 4…or was it 5 of the 21DSD and I actually found this to be too sweet. I used half as much banana, no sugar variety of almond milk, cut the banana in half and added a tablespoon of raw cacao, must less sweet and just to me, overall has a better flavor. I also added in THREE cups of spinach! It was delicious.

Thanks for the suggestion! I need to do another round of the sugar detox, I’m back eating too much sugar… So I’ll definitely try your substitutions next time!
